Tomato
Salad
My mom used to
make this as a side for dinner all the time.
I made this as the first dish I ever served Tiffany when we first
started dating. It is very simple, but
very good. Use the best fresh tomatoes
you can find. Heirlooms are great, but
romas or just about any hot house medium size fleshy tomatoes will work.
Ingredients:
Tomatoes
|
4 medium (or 2 medium large),
sliced thin
|
Garlic
|
4 cloves, smashed and minced
|
Parsley
|
1 tablespoon, chopped
|
Olive Oil
|
2 tablespoons
|
White wine vinegar
|
1 tablespoon
|
Salt and pepper
|
Instructions:
Arrange the sliced tomatoes into a
serving dish or split between two.
Sprinkle the garlic over the tomatoes.
Add the vinegar and olive oil over the tomatoes. Sprinkle the parsley and a pinch of salt
& pepper over the dish. Refrigerate
for an hour. Serve with crusty bread and
enjoy.
